A soft opening was held on Tuesday for Low Brow Barbecue's new permanent location at the City Centre Mall.

Owner and Operator Cory Young said they had a good turnout for their first day.

"We've been very steady since we opened the doors, which is quite nice."

Young said that he and his wife Niki Woycik always enjoyed making food for other people, and they now have four staff members who work hard and help ensure things are always running smoothly.

He said it started in 2020.

"We used to just cook for friends and family and then we always joked that we would start a business and have a food truck and then we did an opening, we took over another round for a night, did a pop-up restaurant there that went over extremely well. And then we started renting the Tommy Douglas Centre for once a month and doing take-home meals out of there," shared Young. "It just kind of snowballed."

"We had our last one April of 2021, and then we opened the food trailer June 1st of 2021."

They set up at The Wholesale Club, at Canadian Tire raising money for Jumpstart, at River Park, Don's Plumbing & Heating, Quality Plumbing & Heating, the Weyburn Credit Union Spark Centre, Ceylon and Montmartre.

Their new locale is where the former Comfort Cafe existed for a time, which was a popular choice for many. However, due to personal issues for the owners, Dave and Bev Katschke, it had to close its doors. 

"They approached us, because they didn't want their their customers that relied on them to go without, right? So it just made sense because we were jumping between seasonal spots," said Young. "So now we have it's a permanent location. It gives us some facility to cater out of where we can also prepare the food for the food truck for the events that it goes to, and just give Weyburn different options." 

He shared how the menu has changed.

"We've added now more meals into it. Before it was all individual items, because when you go to a food trailer you don't want a big meal, you just grab in sandwich or you're grabbing mac and cheese or some beans or something," he noted. "So now it's more meal-based and then we get to do some fun stuff on the side as well." 

"So now we've got deep fryer get to do like wings and and our own cheese sticks that we make, and then, we now do nachos. We make our own nacho chips instead of buying them and so it allows us to to do a few more things that are a little bit different than what Weyburn is used to, but hopefully they they like it."

"We make a lot of our stuff from scratch, so there's definitely a lot of behind the scene hours, but we've been able to keep four awesome staff outside of our family through the whole time we've been going, so that really helped from that, we can focus on doing that stuff, and they're they're all amazing that they all work really hard," said Woycik.

Young noted it allows them to step away when they need to.

"Just having everybody support in the community is made it possible for us to be able to give back to give back to the community of Weyburn," Woycik shared. "I've grown up here my whole life so it's been nice to be able to give back when we can."

The Low Brow BBQ is open at City Centre Mall Monday to Friday from 7:00 a.m. to 7:00 p.m. and Saturday 7:00 a.m. to 3:00 p.m. and they are closed on Sundays.
